I have used Bradley electric smokers for many years, now owning a diditally-controlled model. Each model requires the use of proprietary bisquettes…and these are them! Small chips of various hardwoods–in this case, pecan–are lightly held together with a binder and compressed into a ‘hockey puck.’ They slide very well down Bradley’s feeding tube and advance in an orderly fashion to the smoke generating unit. I like pecan for smoking sausages and chicken quarters, finding the smoke to be less robust in flavor/aroma than hickory (which I do use for hams and bacon slabs.) Oak and Maple bisquettes…and Bradley’s proprietary mix, which includes ash, are equally good for light smokes on beef products.I have been a chunk wood smoker, using the familiar two-barrel chamber smoker/barbecue units. This bisquettes allow better control over the time a product is exposed to smoke and the quality of the smoke is ‘almost as good’ in my judgment. Back in the Day, I enjoyed getting my own wood and splitting it. These bisquettes make the process easy and allow for better use of material.
